Chef Michi honed his skills at a long-established Sushi restaurant in Tsukiji, Tokyo, and then moved to the U.S., where he worked at Shiro's, a renowned Sushi restaurant in Seattle. There, he learned about Western tastes while promoting Edomae Sushi using local ingredients. Later, he moved to Hong Kong, where he was appointed head chef at Sushi Zo, a restaurant highly supported by local customers. .
