At Sushi Waku, Chef Michi crafts Sushi that transcends traditional boundaries, showcasing a new era of Edomae sushi. With extensive experience in Japan, the United States, and Hong Kong, Chef Michi reflects the diverse culinary preferences of both Western and Asian diners.

We primarily use fresh, seasonal ingredients sourced from the coastal waters of Japan, meticulously prepared in the Edomae style. At Sushi Waku, Chef Michi engages with guests at the counter, offering friendly conversations and insightful explanations about each ingredient.

Chef Michi’s goal is to create “A Sense of Unity” between the guests and with Chef Michi, fostering a unique connection.
