Chef Michi

Michikazu Yoshida

Chef Michi honed his skills at a long-established Sushi restaurant in Tsukiji, Tokyo, and then moved to the U.S., where he worked at Shiro's, a renowned Sushi restaurant in Seattle. There, he learned about Western tastes while promoting Edomae Sushi using local ingredients. Later, he moved to Hong Kong, where he was appointed head chef at Sushi Zo, a restaurant highly supported by local customers. . With his inherent brightness and energy, Michi always tries to create bonds with customers, making them want to return to Sushi Waku.

Manager

Emi Hirano

Emi ventured to the United States early in her career and worked as a server and bartender at various Japanese restaurants in New York City. In 2018, she was promoted to Assistant Manager at a prestigious Japanese restaurant, steadily advancing in her career. Although her primary base was New York, Emi moved to Hawaii in 2022, where she gained valuable experience working at her first Italian restaurant. Now, she proudly joins Sushi Waku as Manager and Sake/Wine Specialist. Emi has a passion for alcoholic beverages, with deep knowledge not only in sake but also in wine and whiskey. She continuously seeks out new sake varieties to select the perfect ginjo sake that complements Sushi Waku's exquisite sushi.
